What is almond milk?

Almond milk is a water-fat emulsion made from ground and filtered almonds (Prunus dulcis). Its nutritional composition is radically different from that of cow’s milk: it is very low in protein (0.5–1 g/100 mL vs. 3.5 g for cow’s milk), naturally low in calcium (compensated for by fortification in commercial products), but rich in natural vitamin E and monounsaturated fatty acids (omega-9). It contains neither lactose nor casein—two major allergens found in dairy products.

Almond milk has a specific nutritional profile with documented benefits and limitations.

  • Vitamin E: a fat-soluble antioxidant that protects cell membranes against oxidative stress—significantly higher levels than in cow’s milk

Precautions and contraindications?

Almond milk is well tolerated in most cases—but there are a few important precautions.

  • Nut allergy: absolute contraindication—reactions can range from hives to anaphylaxis
  • Iodine deficiency: unlike cow’s milk, almond milk contains no iodine — monitor intake if consumed exclusively, particularly in pregnant women and people with thyroid conditions
