It is again an essence obtained by expression. There are 3 types of Mandarin essence, depending on the ripening of the fruits and the type of extraction: green (November), yellow (December), and red (January in Sicily). The sweetest is the essence of red Mandarin. There are also two other varieties of Citrus reticulata: the Tangerine variety, originating mainly from America, with a lighter smell, and the less common Clementine variety, originating mainly from Italy, orange in color and smelling characteristic of zest.
