While scientists call it “Star of Bethlehem,” “umbellate star-of-Bethlehem,” or “Ornithogalum umbellatum,” amateur botanists like to refer to it as “the eleven o’clock lady.” Why? Quite simply because the immaculately white flowers of this small spring plant open only when the sun is at its highest point. They close again at dusk or when it rains. Widespread throughout Europe, and particularly in France, the umbellate ornithogalum thrives especially in clay soils. It is often found in meadows and along the edges of paths, where it grows, gently cradled by the sun’s rays.
