In the body, vitamin E is essential for the proper functioning of cell membranes, ensuring their permeability and strength. It works alongside essential fatty acids, which it also protects from oxidation. Tocopherols were known for their natural antioxidant activity and their importance in animal husbandry; it was not until 1968 that Americans recognized the essential role of vitamin E in humans.
Foods contain d-series tocopherols and tocotrienols, which have varying levels of vitaminic activity. D-α-tocopherol, the most abundant form, is also the most active. In the body, vitamin E is primarily present as free d-α-tocopherol, bound to plasma or cellular lipoproteins. Synthetic vitamin E is a mixture of stereoisomers, sometimes esterified.
At the molecular level, tocopherols neutralize reactive oxygen species and free radicals; acting as oxidation chain breakers, they protect unsaturated fatty acids from peroxidation and thus help maintain the integrity and stability of cellular lipid structural components. They act in the lipid phase and at low concentrations (1 tocopherol molecule per 2,000 lipid molecules). They act synergistically in combination with vitamins A and C, carotenoids, and selenium-containing enzymes.
The main dietary sources of vitamin E are animal products, such as eggs, meat, organ meats, and milk, as well as plant-based products like vegetable oils (wheat germ oil, soybean oil, olive oil), cereal grains, and green vegetables.
