How do I use these ferments?
When preparing kefir for the first time:
It's very important to use mineral or spring water. Do not use tap water, which is often chlorinated. Pour the contents of 1 sachet of yeast for water and fruit kefir into a large glass bottle, add 40 g of sugar and a glass of mineral or spring water. Shake to dissolve sugar and yeast.
Leave to stand for 1 hour. Then add the contents of 1 sachet of ferments for water and fruit kefir, and top up with the rest of the liter of mineral or spring water.
Then add the juice of a lemon, and 1 or 2 dried fruits (fig, apricot, etc.). Shake and close the bottle. Leave to ferment at room temperature (min. 20-25°C) for 48 hours. A whitish deposit and opalescence may appear, but this is perfectly normal. When fermentation is complete, carefully transfer the top ¾ liter of liquid, without shaking, into a second glass bottle, seal tightly and store in the fridge for at least 1 day.
Fermentation continues and the kefir becomes slightly carbonated. Enjoy chilled.
For the following Yalacta fruit kefir preparations
Immediately after transferring, take the 250 ml remaining at the bottom of the first bottle and add again the same quantities of sugar, lemon juice and slices, and dried fruit, in order to repeat fermentation at room temperature (min. 20-25°C). Kefir can thus be replenished successively, up to 10 times, subject to good conditions of hygiene and use. For optimum efficiency, store yeast and fermenter sachets in the refrigerator.
