Beer yeast is one of the most important natural sources of thiamine ( vitamin B1 ), which is essential for the metabolism of carbohydrates and fats: a tablespoonful provides nine times the recommended dietary vitamin B1 intake. It is also an excellent source of vitamins B2 ( riboflavin ) and B3 ( niacin ). It also contains vitamin B5 ( pantothenic acid ), B6 ( pyridoxine ) and B8 as well as proteins of excellent quality. Finally, it contains polysaccharides , particularly glycans and mannans , substances that can have an interesting effect on the immune system .
