The coconut blossom sugar Nature Biosagesse 500g is made from sap of coconut flowers (Cocos nucifera), according to a craft process.
The harvest of sap blooms is a very old tradition that requires a particular expertise and great physical agility. Indeed, a man must climb coconut and throw up in the top bow down: after a very fine incision, the coconut will leave flower nectar flow.
Several incisions, twice daily, will allow a continuous flow, for manufacturing different products. After fermentation, one will make vinegar, after distillation, alcohol, after baking coconut sugar.
The coconut blossom sugar consists of 85% sucrose, 4% fructose, and 4% glucose. Fructose is sometimes poorly tolerated, it is hardly present in the sugar.
