Astaxanthin is a pigment of the carotenoid family. While some vegetables may contain, these are marine species which are the primary sources, astaxanthin is produced by several kinds of algae and plankton (eg Krill Oil). This is particularly the red pigment that gives color to salmon and shrimp.
